
Okay, I'm with ya- blackbean brownies sound effing weird and at first the idea sorta made me want to vomit. But I've been determined to create something as close to a molten chocolate cake that doesn't involve being ridiculously awful health-wise for quite some time. I think that this comes pretty close and I'm in love. They taste exactly like regular brownies. The original recipe can be found here, but I made some adjustments in an effort to omit the sugar and flour and add some extra nutrition.
Ingredients:
2 15oz cans black beans, rinsed and drained
1/2 c water
1/3 c sugar
1 1/3 c applesauce
1 1/2 c oatmeal flour (just grind up oatmeal in a blender)
1/2 c cocoa
1 T. baking powder
1 tsp baking soda
1 tsp salt
1 12oz package semi-sweet chocolate chips
Directions:
Prehead oven to 350 degrees and lightly grease a 9x13 inch baking pan.
Puree black beans in blender. I added water and about 1/4c applesauce as needed until it was a smoothie like consistency.
Combine black bean mixture, sugar, and rest of applesauce in a large mixing bowl. Mix until well combined.
Add oatmeal flour, cocoa, baking powder, baking soda, and salt. Mix until smooth.
Stir in chocolate chips
Pour bater into prepared pan. You can lick the batter with no guilt since there's no eggs :)
Bake for 25-35 minutes or until toothpick comes out clean.
