Carrot Cake Muffins with Cream Cheese Filling

As most of you know, last weekend was the Superbowl. I'm just going to say it: I don't love football. There. Now that it's out there, I will say that I do have an appreciation for Superbowl snacks. This year, however, was a bit different. Being in Guam, the Superbowl falls on a Monday morning. So it's more of a Superbowl brunch (which I think it even BETTER). Long story short, I was able to try out yet another tempting Pinterest find: Carrot Cake Muffins with Cream Cheese Filling!

Holy Love.


First of all, I just want to say that these are UH-MAZING fresh out of the oven. They're still good the next day, obvi, but if I hadn't been baking these for an occasion I probably would have sat down and eaten every. single. one. on my own before hubby had a clue what he was missing out on.

Second, I didn't use NEARLY enough cream cheese filling. These were my very first muffins/cupcakes with any sort of filling so I didn't really know what to expect. Fortunately, I saved my extra filling so I was able to add more as needed during consumption but in the future I'm going to go all out.
