
I made this tonight for dinner, simple soup recipe with delicious results :) Obviously there are a million variations that can be made but here's what I did tonight:
Ingredients
3 Tbsp olive oil
1 med onion, diced
2 garlic cloves, minced
2 cups shredded carrots
2 potatos, washed and diced
2 tsp oregano/2 tsp basil
1 tsp salt
6 cups fat-free, low-sodium stock (or vegetable broth)
1 1/2 cup cooked lentils
1 cup broccoli
1 cup small pasta
Directions
1. Heat the olive oil in a 6-quart sauce pan over medium-high heat. Add the onion and saute for 2 minutes. Add the garlic, carrots and potatoes and saute for 3 minutes. Add salt (if desired) and stock, and bring to a boil. Reduce the heat and simmer, uncovered, for 10 minutes.
2. Add the beans, broccoli, and pasta, reduce the heat, and simmer for 15 to 20 minutes, or until pasta is cooked.
3. Serve and enjoy!
